Healing Vegan Broth

The holidays are upon us the weather is getting colder and all of this can leave us feeling drained and more susceptible to catching a virus. The healing, buzzy bone broth is readily available at local grocery stores to remedy that and even on tap at different market places. I have been jealous of the locals sipping on their bone broths while shopping for local goods so I decided to create a vegan broth that is packed with even more nutrients and benefits than any old bone broth can offer. 

Healing benefits of the ingredients: 

  • Coconut Oil: Healthy fat that assists in nutrient absorption

  • Celery: Promotes collagen production in skin,

  • Carrots: Vitamin K, Vitamin C

  • Red Onions: Flavor and blood balancing with high Chromium content that can regulate glucose levels

  • Garlic: Flavor and anti-microbial, anti-viral, anti-inflammatory

  • Turmeric: INTENSE Anti-inflammatory

  • Ginger: Helps Digestion, Anti-Inflammatory

  • Bay Leaves: Flavor and Vitamins A, C, Calcium, Magnesium

  • Mushrooms: Vitamin D, Selenium, B vitamins, Iron, Zinc

  • Kale: Vitamin, K, A, C, magnesium, Promotes collagen production in skin,

  • Cilantro: Great for clearing skin and binds and rids the body of heavy metals

  • Wakame Seaweed: High mineral content, Iodine, Anti-inflammatory, B vitamins, Vitamin C, Vitamin K, promotes collagen production in skin

  • Peppercorns: Mineral content and flavor, Potassium helps with digestion and breaking down fat cells

  • Nutritional Yeast: Complete protein and high in B12

  • Coconut Aminos: Amino acid boost and flavor enhancer, omit if you are avoiding sugars

  • Miso Paste: Fermented food benefits-Improves immune function, increased energy, digestion

  • Sea Salt: Flavor and mineral content

 

The recipe below can be sipped when you're feeling under the weather, used as a base for your favorite soup or subbed in any recipe that calls for a veggie stock. 


What You Need

  • 1 tablespoon coconut oil

  • 1 bunch celery-rough chop

  • 1 bunch carrots-rough chop skin on

  • 2 red onions-rough chop skin on

  • 2 garlic bulbs-smashed

  • 1-2 nubs turmeric-sliced skin on

  • 1 nub ginger-sliced skin on

  • 7 bay leaves

  • 1/2 bunch cilantro-rough chop

  • 1/4 cup dried shitake

  • 1/2 bunch kale-rough chop

  • 2 tablespoons wakame seaweed

  • 1 tablespoon peppercorns

  • 1 tablespoon nutritional yeast

  • 2 tablespoons coconut aminos

  • 2 tablespoons miso paste

  • 16 cups filtered water

  • Salt to taste


In a large stock pot add the first 8 ingredients listed above

  • 1 tablespoon coconut oil

  • 1 bunch celery-rough chop

  • 1 bunch carrots-rough chop skin on

  • 2 red onions-rough chop skin on

  • 2 garlic bulbs-smashed

  • 1-2 nubs turmeric-sliced skin on

  • 1 nub ginger-sliced skin on

  • 7 bay leaves

Sauté to bring out the flavors then the water and remaining ingredients except for miso paste and salt. Bring mixture to a boil then simmer covered for 1-2 hours or longer if desired. Add miso paste at the end and salt to taste. Strain vegetables out and reserve your yummy healing broth.
