30 second Summer Lemon Pesto
This is one of my all time favorite summer dishes. When there's pesto on the table it feels like summer and this recipe is so tasty and bright it will possibly outshine the summer sun. My Mom whips up the most decadent pesto pasta for our guests at our River house every weekend of the summer. My friends and I are all obsessed and live for a invite to the river for some more of my Mama's pesto pasta. This is a lightened up version that is simple, rich and dairy free. The olive oil brings the decadence to this dish so make sure you use a good quality EVOO and you won't even miss the butter and cream.
Summer Book Club: July
Reading in the summer wasn't always as fun as it is now. I am happy to get back into reading and making time for myself to read more. I love reading now under the summer sun or in the shade poolside, it wasn't fun when teachers assigned you books to read during the summer (I had my own stack of books I wanted to get through), but I was pretty nerdy and would usually read the assigned reading plus my own choice of books. This month I started off strong and instantly breezed through 4 books consecutively. I ended the month on the 5th book, but got a little discouraged and have been slowly finishing it (will include that one in the next book haul). The other four books were amazing and kept me hooked. Here are some of my suggestions if you are looking for some juicy summer reads!

Denver, Colorado
Growing up I always knew I would end up in California at some point. It was just destined to happen and I loved every second of it. But never did I think I would be living in Denver, Colorado AND absolutely loving it! I literally had never been to the city of Denver before I was about to move there. I had been fortunate enough to visit the rocky mountains for a memorable snowboarding trip with my family for my sweet 16, but that was my only experience in the high altitude.

AKA hillbilly hot tub. Yes I went for it. I was sitting in my backyard, sweating in the sweltering Denver DRY summer heat taking a little scroll through instagram and a sponsored post for the Hey Wanderer blog popped up on my feed. They had a video "how to" of setting up a stock tank pool. What was this and why had I not heard of it?

Gigi inspired me to start a thorough Spring cleaning from within. I attend the monthly Green Lodge Goddess gatherings organized by The Stoned Housewife and Luminous Collections and it brings together total babes mainly in the cannabis industry. I will have to post more about the power and connection these meet ups bring, but in April one of the women who spoke there was talking about how connected we are with the earth and it really resonated with me because I had been ferociously cleaning under the Taurus new moon and noticing that I feel best when I am following along with the stars and eating what is fresh and local that comes from the earth’s natural, seasonal cycles. So naturally spring is a time for detoxifying plants and cleaning all around and within.
